I've managed to narrow it down to 3 choices: Assassin, Sorcerer, or Mystic Knight.

I wouldn't recommend sorcerer for your first playthrough. Sure, he has ridiculously flashy spells and is strong as fuck, but standing a mile away from the action charging your nukes isn't terribly fun.

Why not play sorcerer and if you like switch to MK later? If you want to be better at melee you could throw in some fighter, warrior or assassin.
Just decide if you want to play a magic build or a physical one. Then just jump around the classes that fit that build (fighter, warrior, strider, assassin, archer for physical - mage, sorcerer, mystic knight, magic archer for magic). You either want all magic atk or all physical atk and a balance for defence.

Honestly Mystic Knight is fun as fuck but doesn't feel as rewarding as Asassin, Ranger, Magick Archer. Feels more like i'm being a buff bitch for my pawns.

Properly teach your pawn to be a mage first then. Go as a mage and only heal and shoot fire balls and your pawn will say "well it seems my master would like me to just heal and shoot fire balls." It's not rocket science.
Every vocation is viable, I've played through this game a bunch of different times. Mystic archer, sorcerer, and mage are very strong and flashy but I found them to be a little boring.
I had the most fun playing strider, assassin, and fighter.

There are commands assigned to the d pad which are Go, Help, and Come. Spamming Come and Help too much during battle will turn your Pawn into a Guardian. A Guardian Pawn will stick to you during battle and never attack unless you're hit. Basically it's a shitty body guard that draws all the aggro to you and never attacks until you get rekt. They're useless.

Aside from learning from you, pawn behavior is also set on their inclinations. Using the commands has the bad side affect that they will affect the inclination.
Guardian for instance is an universally abhorred inclination, that still a lot of pawns have because people use the command "come" which causes this inclination to get stronger in the pawn.

Your pawn is going to copy your playstyle. Because of this, you are going to want to have your pawn as a similar vocation to yours, or exact. This is because pawn's need to learn how to use their skills properly from you. My pawn and I were both fighters, and I managed to teach him how to use that one shield skill while standing under flying dragons that will throw your character up in the air so you can grab its tail.
Another pawn I hired was a mage pawn, and his owner taught him how to avoid almost all damage basically. The pawn would mostly spam buffs and heal, but every time something dangerous came towards it, it would jump and dodge the attack while canceling its spell.
You can also teach your pawn to perfect block as a fighter and he'll basically never take damage either.
There's a ton of other stuff you can teach your pawn, but you have to have the same skills as them to teach them, and that usually means you have to play the same class. I also recommend that you either change your pawn's class at level 10 and only then, or never, as changing their class fucks them up if you trained them and they won't attack anything. This happened to my fighter pawn I leveled until level 100

I have type 2 bipolar disorder, OP. It makes me really indecisive and it makes me instantly regret any decisions, as soon as I've made them.
So my advice to you is to just play the game and try everything as you go. There's no need to make an "Optimal" build. Over the course of the game, I tried everything and devoted a few levels to each class and I was able to destroy big monsters in endgame like they were NOTHING.
I ended up with Mystic Knight, just because I liked the moves.

My first playthrough on Hard, I reset my character to first level, and made a new pawn. She was gloriousBefore my save file got corrupt and then I fucked up on loading my backup somehow. That's one thing I'm looking forward to on the PC version, being able to keep and share multiple save files.
My pawn's name was Ophelia, and she was a badass buff warrior princessWith huge hips and giant titsand tanned skin, with a butch haircut.
Some of my favorite moments in gaming were just wandering around DD's map with that pawn.

Was it vanilla dogma? When DA came out, stats were revised, so end game gear will make up like 75% of your damage. Add on the augments on top of that, and the difference between being balanced and minmax aughtism is tiny.

A month ago when I created a new arisen, I ran into two people duking it out in Gran Soren on my way to the black cat, it was the first time I've ever seen npcs fight each other.
I stood there and watched them, they both had just one punch attack.
Eventually one of them got knocked down, then stood up, they both greeted each other and left in opposite directions.

I made a minmax sorc leveled MA. Stuff did die fast, but I couldn't take too many hits, I had to pack at least 50 large mushrooms for BBI because I was always struggling for stamina, and I had a hard time with any melee even with perries (enemies like direwyvern, where the heart is between the wings, are still best taken down with stabbing). I remade it by playing sorc for 60 levels, then strider up until level 130 where I switched to MA, and I just felt so much better. Needed an extra cast of ninefold bolt or so, but the tradeoff in damage for everything else was more than worth it for me.

Sinew is always good, extra carry weight for BBI is always helpful. Beyond that, for physical classes clout is good, and for casters the magick version of clout (forget the name) for better damage. For a sorc pawn, the augment to reduce cast times, and the wyrmkings ring.

You're comparing with a fully upgraded ultimate weapon. To get one in the first place you've already beaten the toughest content. You should should do this again but with the kind of stats that a character might start the DLC with, for example try doing it for a level 100 character using the weapon rewarded for defeating Grigori.
Also, don't forget to take into account the difference you start stacking buffs etc. A 352 damage difference multiplied up with augments and periapts could probably exceed 1000 damage without a problem.
And don't forget the damage formula which is primarily subtractive. An enemy with say, 1000 defense will take 1 damage from attacks dealing 1000 damage or less but if you attack for 1100 damage then you will deal 100 damage per hit. While your attack rating may only be 10% higher, you're hitting for 100x more damage. A pretty extreme example with made up numbers, but it does need to be taken into account.

Keep in mind that pawns are only as smart as their AI and that you can revive them infinitely.
So things that increase their defenses/health or mobility aren't really that useful, they'll just warp to you like Watson if you leave them behind, and if they die you just press B for an instant 50% heal.
You also need to keep in mind their quirks, like how they never tank hits when they're casting spells, so something to make their stagger resistance better during casting may seem useful, but actually never gets used. Articulacy however will let them get spells off before the attacks get to them, so is obviously better.
If say, you give them an augment that increases they damage output at low health, then they'll probably end up using it more often than you will.
Pawns are pretty flexible with the augments you can use, moreso than your Arisen which will pretty want to stick with Mobility augments.

It's fine, half the reason I was so hyped for game was because of how the MA skills worked.
But in practice I think it's better to max out the Strider vocation, then max out the Sorcerer vocation, then jump into Magick Archer. Doing those two vocations first will give you a good impression of both dagger/bow gameplay and how to make good use of spells and elemental weaknesses.
By playing those classes you'll also unlock some great augments for the MA class, which will make it more forgiving to play, and your stats will be set up nicely with a healthy mix of the things you need. The other problem is that the MA's available gear is really lacking early on, so it's better to start later on when you have greater availability.
There's nothing stopping you from going straight into MA but the game encourages you to switch classes often so it doesn't hurt to "work up to it" with some detours on the way. The MA will carry you through the entire late game so you don't need to worry the game will be over before you switch, trust me it won't be.
The danger is you jump straight into MA at level 10 with no good weapons, do no damage and assume it sucks.

Iraklis can deal absurd critical hits but it massively reduces all the strength granted by equipment (Weapons and Armor), meaning the damage of those crits relies solely on your base damage.
Unarmed combat is something every class has, since you have no weapons you attack with your fists, but the damage your fists do isn't static and will actually scale off your base strength. Unarmed Combat was made possible as more than just a gimmick with the introduction of Conqueror's Rings in BBI, which increases unarmed damage but does so by a percentage, so you need that base strength.
All weapon skills are unavailable whilst unarmed, with the exception of the Forward Roll which all Yellow Classes have by default. Assassin has the highest Strength gain and access to the dodge roll so it's basically the natural Vocation for any unarmed build.
Basically both Iraklis and Unarmed require minmaxing for maximum Strength since your weapon won't be providing it, but since these vocations are already perfectly suited to those playstyles it doesn't matter.

Enchanted Weapons just provide a default elemental enchantment until it gets replaced with another enchantment. The bonus is that you then get the new enchantment with the same magical damage as before.
Magical Daggers/Swords have this really weird calculation for how they do damage but they basically increase DPS massively for classes with balanced magick/strength.
Sapfire Daggers and Dragon's Roost inflict their debilitation on multi hits.
This also applies to Rusted, Aneled and Golden weapons, all hits the weapons do (even through skills) will inflict their debuffs. If those weapons are Staves, you can actually inflict debuffs through your spells. However the spells/skills that can transmit debuffs aren't always consistent.
A favourite trick for Sorcerers is to use Miasma with a Rusted Archistaff as it instantly poisons and causes torpor in a lingering areas, and Torpor never stops being useful for the entire game. If you see a Rusty Sorcerer in the rift, consider trying them out.

I was planning on re-making my strider pawn but I wanted to finally try out mystic knight at not shit framerate. I was able to train my pawn to spam brain splitter and hailstorm volley since I was also went strider after going pure assassin to level 200 but I wouldn't be able to do that if I go mystic knight this time around.
Even if I did go strider for a while post 200 to train my pawn when I switch back to mystic knight wouldn't they eventually pick up habits from me being a mystic knight and undo what I taught it? Having a kick-ass pawn is more important to me then being able to play mystic knight the first time around.

You got some pretty decent bonuses for porting your DD save to DA. Eternal ferry stone, some armors/outfits, 250K RC.
I kept my vanilla copy, so whenever I started a new playthrough on a new gamertag, I'd start in DD, play up until the prologue is over and Grigs steals my heart, then pop in the DA disk and import my save for free stuff. Julien's armor is pretty easy to upgrade at almost the start of the game, and the stats will carry you through GS, when you can buy individual pieces of gear that will give you better stats.
So, looking at the pawn inclinations in the wiki, it seems like if I just spam the GO command at all times, I should get a pawn that scouts ahead, and attacks the weaker enemies (leaving me to take on the big ones, which I like). Scather and Pioneer.
Considering I'm gonna go be magic archer and climb all over enemies while on fire, and my own ranger will be fighter, it seems like that would work?

Not necessary due to how combat and damage works. Holy trinity is necessary in mmos where damage is unavoidable and must be soaked and healed through. In this game you can run with a party of four sorcerers, archers, warriors, whatever you want. Even solo if you brine your own pawn. Some prefer to take a mage along for the healing, while others just stock up on consumables. If you play as a sorcerer and can't deal with your long casting times you may want to consider at least one pawn that can help keep fuckers off you until you're done casting.
All a matter of preference, really. All classes work and any composition is viable.

The game is pretty easy up until the game opens up around Gran Soren, and you have to deal with super bandits and Chimeras and shit. Just steer from the Abbey, the Mine, and the Winded Pass until you hit level 25 and you're fine.

Here's how you play on your first time:
Pick any Vocation that looks fun to you-> Play it til rank 5 when you unlock your second batch of core skills-> Keep playing if you like it-> Max it out.
Switch to a new class if you ever get bored or it's not your thing.
Choosing vocations for specific level ranges is unrealistic because that is not how the game works at all and "builds" are pointless. Just go with the flow and that feels good for you at that time.

I'm just glad I'll be able to play in the comfort of my pc chair and set-up without having to relocate to the living room where the controller cable is just a little too short, the couch too far away, and the tv usually occupied by someone else. I haven't turned on my ps3 in a long, long time.

I'm glad I finally get another try at this game. I beat the game 2 times doing a warrior play through then playing ranger, but I waltzed into BBI and it broke my spirit so hard I didn't do another play through after those.

Game is definitely a rough diamond.
It scratches all the right itches for me. Bought it twice on consoles. No regrets buying it a third time.
Reminder for new players to start the game on normal but to move it up to hard once you've gotten used to the game. Playing on hard mode is easier than normal some aspects such as large gold bags dropping more abundantly allowing you to get more gear and you also do more damage to enemies.

It's honestly not even a step up in difficulty, if you're good at not being hit then you won't notice a huge difference besides that sweet gold gain. Hard mode is a lot more fun and rewarding than normal.

Pawn teaching is more of them learning your habits and quirks, than actually teaching them, although they do actually learn some things like how to fight a certain monster. If you come across a monster that you haven't faced before and learn their weak points, the next time you fight something like it again, they'll focus that instead of just blindly attacking it. If you throw a lot of deers at enemies you pawns will start to do the same. I always like to see how a pawn plays when I hire them, then I can see how the original player did things.
