The inherent problem is that original Cloud was heavily stylized. Once you translate that onto a realistic 3D plane meant to emulate real life, it looks REALLY fucking bizarre, which is why the Dissidia and Smash models give him some definiton to compensate and make it less jarring.

If you knew anything about that process, Cloud and Zack were recieving proper nutrients during that entire time frame while Jenova Cells taken directly from Sephiroth himself mutated Cloud into a Sephiroth copy, meaning Cloud's body was essentially rebuilt to mimic Sephiroth's physique through unnatural means.
Zack's body rejected the process, meaning he stayed the same, but Cloud was turned into a Sephiroth clone at the cost of his sanity. As a result, his body rivaled Sephiroth in terms of physicality and overall strength.
Advent Children, for all the shit it gets, got this right.
