Im starting a new character in morrowind.
Which class and race is best for cleaning dungeons with ease?

Everytime I start Morrowind i just roll with Argonian/Atronach/Spear. Rolling some points in Destruction/Mysticism does not hurt either.

Hoard as much gold as possible, sneak through most of encounters, use potions/scrolls to deal with tougher enemies.
