I don't think grimrock I the beat example for this. If you don't have a minotaur, you're fucked.
Generally I do, in WoW I'm a Worgen Warrior and in TERA I made an Aman Berserker
half-orcs and races you never see are always chosen too

When I get the chance, which isn't often.
As long as they are somewhat different than playing as a human I'll usually do a playthrough with them.
I'm human all the time. Something that lets me pretend not to be for a while is fine with me.
I usually choose depending on class theme, and also what their armor appearances look like.
