The Sith Empire is much more organized and better equipped but they still don't win. Why? Because of the Sith. The Sith are holding back their entire empire by burning resources on infighting and by forcing constant restructuring due to leaders/important figures being killed without warning.

Throughout all of KotFE there are probably a couple dozen lines customized to your class. I haven't done hunter but agent is pretty entertaining. Valkorian mentions how your head is kind of crowded, SCORPIO has some unique dialogue.
The entire thing is pretty much written for a Force User though. If you're a non force user you just get some hand wavey "well even though you don't use the Force you're still pretty amazing" even if it goes against thematic elements of non-force classes. Like Agents are just supposed to be these cogs in the machine who serve at the pleasure of the Sith for better or worse but definitely nothing fair or logical about it. Hunter main story focuses on their unique relationship with the Empire - separate but necessary. Like, why the hell would Lana give a shit about BH, Agent, Scoundrel, or some random spec ops trooper.
Content is dope though and really a return to form for the series.
