Because the very premise of the gameplay is slow. Baiting out attacks and counter hitting. Big monsters with slow attacks to dodge and then hit back. Its all slow. They'd have to build somethng from the ground up to do it, and ignore everything that souls combat has taught them.

Get the already existent swordsman class and basically speed up his movements. Make him look as if he swings that giant sword effortlessly.
Make more giant enemies, lots of apostle designs that can be climbed and attacked from a variety of points, a cannon mechanism with all the little goodies Guts likes to carry around (bombs, throwing knives, etc) and you got a berserk game going on.

Armored Core 4 maybe, but you could argue that thats not exactly melee, and its definitely... too fast, especially considering the previous AC games were on the slow side.
I think Platinum could do it.. although Platinum has a lot of other issues with their development to keep it from being truly great.
Capcom could make it good if they dumped resources into it, but I doubt that would happen.

Fighting smaller enemies wpuld be more engaging and more common than in MH, but fighting major Apostles would really give you the same kind of feel you get when hunting a Lagiacrus or something.

Also because I saw that he's not good in small spaces and always does a certain stance as if readying himself for each heavy attack. And due to its fuck off size and length I guessed Guts power was centred more on massive clearence of enemys and apostles arms and legs. That and it looked like they too where slow is pages.
