Companions is the only major questline that's like 50% variant quests, and the picture seems to imply that all the quests are that lazy.
As far as the journal, you can turn off quest markers if you want. As someone who has actually studied both orienteering and nautical navigation before I don't really see the problem with them. In real life when you don't have roads you look at your map and set a compass bearing to follow.
