Why couldn't humans be hunters in vanilla?
There certainly are human hunters in the sense of hunters who hunt game, but they don't have a tradition to produce archer heroes that any of the hunter specs represent (as oppposed to orc beastmasters, dwarf riflemen, troll headhunters etc). Nathanos Marris was pretty much the only one.

Like yeah humans had shootymans and rangers and trappers, but the class in WoW had a connection with nature that at the time didn't truly gel with humans.

While I kind of miss this, I do wish they'd just lift most class restrictions. Lore-wise there's now an excuse for nearly everything.
A better question is why weren't Humans considerably better at fishing than other races?

Whether or not previous lore supported it, their line of thinking was probably that Dwarves had some kind of aversion to magic or were unsuited for it; they couldn't be Warlocks either. Blizzard used to be pretty big on a feeling of character identity. Additionally, it had the design advantage of pushing more players toward Gnomes.

Warlocks would pass since they're technically 'good', they'd probably get hanged for having a demon with them while inside cities though. I miss the warlock class quest where you poison a dude. Rogue and Warlock class quests really let you be an asshole sometimes, and it was great.
