Obviously Mount & Blade is the only game that even comes close to such a description, and OP is clearly already aware of that, 'fill the void' is completely ambiguous and doesn't mean 'has to let the player be a Norman knight'.

Also MnB is the only game. Dress yourself in some mail armour, get a horse, lance, and you're basically a Norman. There's probably a 1066 mod too.

dark souls and dragon's dogma have enough armor and weapons to roleplay as one, easily. and monsters are perfectly reasonable allegorical opponents.
