I played DeS and DaS back to back less than a year ago and I definitely preferred Demon's.
I'll be posting a picture later but I'm actually a staff member working on the Playstation Experience exhibit.
The dress rehearsal had some neat announcements, but nothing really major. A lot of it was confirmation of SCEJA related games being released in NA so expect to see the Gravity Rush remaster launch date brought up even though it's been confirmed, and others like that.
-FFXV is going to have a Playstation exclusive section which will include a Gilgamesh boss fight, summon, and outfit change for Noctis. It will be played on stage.
-Persona 5 is going to have its release date finalized but the trailer will only have about 25 seconds on new footage.
-Ubisoft has an announcement with Farcry, but it's just an exclusive mission and a couple of crafting items in the new Farcry.
-Capcom is announcing the last fighter for SF5 vanilla roster, as well as the first DLC fighter before the grand finals of Capcom Cup.
- Bloodborne: Heart of Demons DLC will be announced.
I'd be pretty happy if Demon's Souls came to PS4 with more content like the broken archstoneand fixes for the duping/exploits. I doubt it'll happen though.

2. Stonefang Tunnel. A complete pushover stage where the only hard enemies are the Black Phantom NPCs in Stonefang 2. The miners and the bees/slugs that count as the majority of enemies are fucking HP sponges that pose zero threat.
3. AI is the dumbest in the entire series. Get close to a Boletaria archer? They won't attack you. The Fat Officials take 10 year breaks in between attacks. The red/blue-eyed knights and the skellies in Shrine of Storms are piss easy to backstab. In each zone of the game, only one type of enemy ever poses a significant threat (like how the Cthulhu faces in Tower of Latria 1 are the only dangerous enemies there).
4. Bosses are mostly shit. Three good bosses, False King Allant, Flamelurker and Maneaters. Three mediocre bosses: Tower Knight, Armor Spider and Penetrator. The rest are utter shit. Please don't defend Fool's Idol, Dragon God, Storm King, Adjudicator and any of these other shitty, gimmicky and easy bosses.

You're getting stuff mixed up. Most remasters (including an hypotethical DeS one) have the same graphics as the original version, but run at 1080p 60FPS. TLoU with the 60FPS option does just that. The 30FPS option is an extra thing that adds a bunch of post-processing that wasn't originally there. Nothing was "lowered" compared to the original.

In terms of replayable content I have it:

They are cheap cash grabs, they are oftenly advertised as games that can finally run at 60fps which isn't really much of a selling point when that's how most of them should have ran in the first place. The experience I had with it at the time I came out while the Souls series was still not a shitty maymay thrown around by normies. In fact no obnoxious Petiton Cückold Race or Xbuttlickers nowhere to be seen made it something special, something unique. A once in a lifetime experience.
I got goosebumbs playing that game back then. The twist on online-multiplayer was like nothing ever before it and it was like nothing after it.
Once I encountered a Japanese player and we went on an amazing journey, at the end he dropped me a gift, bowed down and disappeared, leaving me a message over PSN saying "good luck". That was so powerful and overwhelming at the time I will never forget it for the rest of my life.

Ok, so the stuff from the webm definitely doesn't work anymore. I was standing in the exact same spot as the hexer from the video (pay attention to that crack/darker piece of stone to the left of my character on the first two pics) and on multiple occasions mimic refused to grab me. It becomes harder to take risks and invest that money that's why you see less and less big budged exclusives expect if you have a smaller proven formula like Souls proved to be and led to BB. But it got proven precisely because it went multiplat. Each gen you will see less and less big budged exclusive, especially new IP that are not in any way died to previous similar games. Like oh, it's happening right now.
