You should always ignore the people that say you should start from Ayesha and especially Rorona if you're new to the series.
The series has become increasingly more "unique" but Escha & Logy is the game that will be familiar enough for newcombers while introducing many of the things people enjoy with the series, except in a less forceful way.
Ayesha is bad.
You need to play Rorona and Meruru.

The Atelier games don't have good stories or characters and the script is usually mediocre.
You mostly play them because of the visuals, light-heartedness, music and relatively deep crafting (opens up the more you play the games, you're not given everything at the start). with some combat sprinkled in.
I would never go so far as to call these games great, but if you're in the right mood they can be pretty comfortable. I mean I don't always feel like playing some stressful super serious grim and dark game or some JRPG with a convoluted save the world/universe plot.

I gave you a reason. They're boring. They're trite. Combat is attack heal attack. Crafting is A + B. They're extremely regressive compared to what the later iris games and mana khemia were boasting in terms of system. Heck even Iris 1 for all it's shittiness had crafting eons beyond what you can do in any of the next gen ateliers. The franchise went to unique and steadily getting better (culminating at amazing in Mana Khemia) to Neptunia tier.
