For the Jedi, lightsabers are a last resort as they are meant to be used in self-defense when one's own life or the lives of others are in danger. For the Sith, telekinetically controlling multiple lightsabers is a waste of power when you could be frying people with magic lightning.
I wonder if it's feasible to pull off a Iato style of fighting with a saber. I guess now.
