What are you talking about? There's a single tricked weapon of 11 that seems to have the moveset of a untricked cleaver and that's it. There's also a bt cannon that's similar to the regular cannon and a shield of the 5 offhand weapons. Everything other weapon is unique.

It takes a while to get used to, I suggest practicing on the trash mobs in Central Yharnam. Wait until an attack animation has begun and shoot them. You should hear a distinctive sound and they'll fall onto thier knees. Now press R1 when close to them. The timing varies on enemies and attacks, so you need to get experimenting with every enemy type and even bosses.
If it's humanoid, it cdn be Visceraled 99% of the time. Some bosses can be baited into an endless stream of counters.
Same thing can be achieved by a charged R2 to the back, you'll notice enemies sometimes unaware of you, walk (don't run) behind them and you'll get a free kill.
The Visceral damage scales off skill, and if you level it lots you'll one shot almost anything you can counter.
