You can't tell a story without interrupting the gameplay and vice versa. Not to say story isn't nice to have, it certainly is. But it shouldn't be the thing that makes or breaks a game.
Graphics are nice to have too. A compelling visual style will make we want to play the game longer whereas if something is unpleasant to look at I'll want to interact with it for shorter periods of time. That being said, I've played some really fun games with shitty graphics before.
Immersion is dependent on what game you're playing and even then imagination is still a thing, believe it or not.
Single palyer games are still good.

It's impossible to objectively measure but you can ask yourself how much you like the world, how much care about the characters, how much you care about what's happening in the game world and how much it makes you forget that you are in fact just sitting infront of a screen and pushing buttons.
