They literally removed the entire mechanic of watching your ignite stacks. Fire rotation is pretty much static know. You know why?

Because damage tied to mana level was too hard.
-Frostfire Bolt removed.

Monk

-Storm, earth and fire now automatically selects a target.

Wrath was okay at first despite the easy Naxxramus. Ulduar was fucking goat, but then they added LFG, the option to skip raid content just from doing 5 mans (this was also added in BC during the Sunwell patch too sadly), and that shitty t9 raid.
And it's been complete shit ever since.

I'm not a WoW fanboy or anything, past few xpacs i've played like 2-3 months worth of them before quitting, but the start of every xpac is fun it just gets stale cuz its wow. and WoD's questing absolutely shits on anything else they've ever done with quests.

-Shadow gets Voidform instead, a cooldown where your dot durations are refreshed while you 1-1-2-1-1-2 spam Mind Flay and Mind Blast for the entire duration. Truly a modern gameplay experience.

Rogue
>-The team considered getting rid of Killing Spree, but sometimes rough edges are cool. It is now a talent, so you can take it or other AoE talents.
>-Shadow Dance was pretty cool, but it is now a passive. 20% chance to re enter stealth that doesn't break from taking damage. Can figure out what you want to do, new opener, combos, finisher, repeat.
-Honor Among Thieves gone
-Bleeds and poisons are now Assassination only
-Slice and Dice is now Combat only

Shaman
-No confirmed removed abilities so far. Enhancement potentially losing ranged attacks like Shocks and Bolts.

Warrior
-Gladiator Stance gone

Warlock
-Malefic Grasp and Haunt removed
-Affliction baseline dots lowered from 3 to 2, Unstable Affliction is now a cooldown/resource spender
-Demonic Fury and Burning Embers resources removed and replaced with Soul Shards

Tanking in general

Thick Hide: Reduces all damage taken by 10%.
Restoration Affinity
Ysera’s Gift: Constantly heals the Druid, or allies when the Druid is at full health.

Its closer than you think. Beta begins at the end of this month to finish by mid February. Release window is May 2016.

It's easy to forget how incredibly tedious 1-60 questing was before the rework. Go and quest in Silithus to remind yourself, they left it practically untouched.

It is true though that levelling was too fast after the rework, and even if you didn't do dungeons at all you would still be overleveled by the end of most zones.
