How do I get better at touhou games?
I'm playing EoSB right now and it's kicking my ass every time. I feel like Zun went apeshit on the amount of bullets on screen, though it's my first space shooter type game, I thought I would at least be able to beat it on normal.

I just started playing the series recently myself. I generally suck at shooters, but I got through EoSD on normal difficulty without too much trouble. For me, at least, it mostly boiled down to figuring out what I needed to focus on at any given moment since there is too much crap onscreen to keep track of everything.
I can't even clear SA on easy, though. Rin slaughters me every time.

This can be easily done in a short amount of time if you're dedicated.
First off, don't have your lives and bombs boosted, that's not considered a 1cc and the later games don't have that feature. Now all you have to do is watch a couple replays on normal, do some practice on the stages without bombing and remember the parts you struggle with as bomb points.
Most of the time when it comes to being new is not having good resource management and wasting bombs, you fix that and you can easily clear most of the games on normal without much trouble.

Some patterns in stage 4 onwards need you to find a gap between bullet precisely, especially Sakuya fight. That's why you need a slower character with small hitbox.
You can still streaming with Reimu since she isn't that slow, but micrododging with Marisa is more troublesome since it's hard to control her speed if you're still a beginner. At least that's how it went for me.

Basically, it goes like this.
Reimu A is low damage, best range, good bomb.
Reimu B is high damage (highest up close), good range, worst bomb
Marisa A is high damage (highest at a distance), poor range, bad bomb
Marisa B is good damage, good range, best bomb
EoSD is fairly balanced, all things considered, it's not really like many later games where one or two shottypes are obviously the best (Team Borderor Solo Youmu if you know what you're doingin IN, Reimu A in SA, Marisa B or Sakuya A in DDC.)

In my opinion it's very good cause of the simplistic patters that get thrown at you making in such a way that you need how to learn to stream, that's what I think it's called, the moving only a bit so all the bullets graze you and not the whole screen is filled with them
