Every character is good for beginners.
Every character has totally different strengths and weaknesses. So you might as well start clocking in time on characters you like.
My whole life I've only used Charge characters and Makoto. I never touched shotos and I was 9-0 undefeated at a local tournament.
Juri's fundamentals are easy, but her Tanden Engine Super requires a LOT of skill to take advantage of. It doesn't uniformly buff her moveset, you have to learn its limitations to really capitalize off it.

Compare U1, the additional knowledge that you need to make use of those chains, to U2, which is like the majority of ultras, an invincible move that deals a ton of damage and juggles. Figuring out what you can do with U1 takes much more work, it's overwhelming for a beginner. I wouldn't say it takes a ton of skill, but it's certainly a lot for a beginner.

There's a spot for every normal. Mika's jab isn't even a bad one either. It's short but has a good hitbox. If Vega or Karin are just pressing roundhouse or Buster Claw, you'll get around them other ways that hurt way harder. The edge of Mika's jab is not an uncommon range. She fully extends her arm, anon.

I used Hawk all the time in Super and Ultra. I'd use his unique lp chop or a standing/crouching jab to tick throw or confirm into tomahawk buster, but if I'm in that range already I know my opponent has fucked up and I'm going to get some big damage. A smart opponent vs Hawk or Gief knows to stay at a good range and use very long pokes or ranged moves to force me to try to be aggressive and react accordingly. Against good players as Hawk my best poke was always s.HK for its range and damage.
Grapplers in SF all work on the same basic principle: their pokes don't lead into much, they have to work to get into jab range, but once they're in jab range they're going to fuck you sideways.

Honestly I have no fucking clue where Nash fits in, he feels very much like Ryu to me: a balanced fundamentals character that can adapt to any opponent.
I don't have enough experience with Nash to judge but it seems like he does everything well (good pokes, ok projectile, good pressure, some limited mixups) but nothing exceedingly well.

Not ALL of them, but a good chunk. She can often be poked out of the dashes as far as I found, so it's not like it's a free get-out-of-jail card.
The normals you'd cancel into the dashes aren't very unsafe on block anyway, so the dashes are mainly there for other reasons.
