On my 2nd ever playthrough I did the ENB challenge thing where the main points are that you can't level, heal during bosses or change equipment and I killed these dudes on my 4th attempt.
This boss is just a test of patience and nothing else. If you wanna kill them in one minute like you did with taurus demon then you're likely getting fucked. Wait for a moment when you can attack safely then patiently wait for the next opening.
