Unlike most other SMT protagonists had been up to that point, they're by the book likable, generic, attractive anime characters.
Part of me likes to think that they made them that way for reasons other than appealing to otaku. "Not being an attractive anime protagonist" was basically Adachi's motivation, which I thought was interesting and lent an element of bitterness to the whole thing.

The answer is fairly obvious if you think about it. Honorifics have lot of meanings and lot of different usage so it's generally a pain in the ass to translate them properly without losing inintial meaning. For example "-san" and "-kun" indicate different degrees of intimacy, "senpai" can be used as a pronoun or as a honorific, it can be also used as "our senpais" which would translate to "our upperclassmen" which doesn't sound very good. It may sound weird to hear native english speakers struggling to pronounce "senpai" but its for the sake of keeping the translation as close to the original meaning as possible.
A better question would be why did they had to translate "onii-chan" when the Persona audience is familiar with the term?
Honestly I would rather have honorifics instead of forced nicknames. What gets under my skin is when they say "Big brother" or "Big Bro" instead of Onii-chan/Anakii. But that's just me
