Theres a good increased difficulty and some of the extra abilities you get are quite good.
Just be sure to always hand off 2 abilities to your companions so you get their good shit.

FF1 has various of my favorite songs in the entire franchise. Tracks like Castle Corneria and Temple of Chaos and even the Town Theme are among my all time favorite vidya tracks.
Same with FF2. I believe that game gets way too much unwarranted hate. It's not bad, just different. And the OST is top notch too. Castle Pandemonium is amazing.

PSX Origins in Hard is the best for FF1. The PSP remakes changes way too much shit.
2 is the best for PSP though.
3 is a mixed bag. The remake is not bad, just different. I'd recommend both for different reasons but I'd probably recommend playing the NES game first.
4 is another pain in the ass too. I absolutely love the remake but I would recommend playing the other versions first. PSP if you don't mind the update graphics but if you are a pixelfag I recommend the GBA version otherwise.
PSX is ass for various reasons like the massive loading times, the USA SNES release is butchered beyond reason with an awful translation and I don't know if there's a good fan-translation of the Jap Release of IV.
5 and 6 are better of GBA. Don't let any nostalgiafag tell you otherwise. Just make sure you grab the music-fix patches.

Final Fantasy 4 remains my favorite FF game, with FF9 coming in a close second in terms of story/themes.
FF1 is pretty close to classic roguelikes, via hindsight it looks a lot like other Final Fantasy games because of the turn based, menu system but has a lot to do with exploration with very little story guidance and a very unforgivable world with no real HP/MP restores outside of towns.
FF2 was made by the same guy who made SaGa Frontier, his philosophy behind making FF2 was that he wanted every character to have something unique about them and grow in a way that would be unique to them. He gets this down better in later games, but thats the reason for FF2s very different leveling system.
I'd suggest you go check out Nethack or Dungeon Crawl roguelikes and if you haven't go look into SaGa Frontier, its an old PS1 game

There isn't really any final fantasy I hate but some have elements that particularly bother me, like 4 forcing a final party on me and extremely grindy ones like FF2's magic.
In terms of story and characters though, FF2 remains as one of my absolute favorites. It didn't feel like they were making pandering characters at all, just characters that were cool and fit the scenario.

It went like this: Chaos is actually a sentient manikin that got adopted by Cid and his wife. Manikins were created by Lufenia scientists through a Crystal they found on The Void. Chaos was then used to kill the Summons of FF1 world and Cid was like fuck this shit this is my son but Lufenians scientists weren't having his shit so they fucked him up and killed his wife, Chaos went mad and to keep him calm they madea manikin with Cid's wife memories on him and that manikin is Cosmos more stuff happened and Chaos, Cid and Cosmos were thrown into the void and Shinryu who was chilling there made a pact of them to make the dissidia wars happen and in exchange he would let them out someday.
Time later, WoL appears on the Dissidia world and he's a sentient manikin made with Cid memories that Cid created. Garlands shits his pants when he sees him for obvious reasons and Prishe saves him and teaches him how to be cool with LIGHT.
More time later, they buttfuck Chaos and everyone is sent to their world and the ending scene of Dissidia is WoL walking towards Castle Corneria aka FF1 start.

the problem with FF4's final cast was that all your non-final characters had some good closure to their story arcs. Kain not being manipulated, Rosa's story of waiting for Cecil to get an erection, and Cecil's story of not being pissed off all the time all sort of resolve together and it isn't really shown how it effects any of them. Rydia and Edge are just sort of there. I dunno.
FF7, Nanaki had most of his storyline cut out and has always been some sort of faggy Fire Wolf that didn't stand out a whole lot from the others.

He starts out by just kidnapping the princess so he can have the kingdom, then suddenly 4 motherfuckers come in and wreck his shit.
