So, there are eight animatronics. The four old ones from the first game, as well as four new ones equipped with facial recognition technology.
If an old animatronic comes in and you're wearing the mask, it'll assume you're one of them and leave you alone. If you're not wearing it, they think you're a skeleton and shove you into a suit.
If a new animatronic comes in and you're not wearing the mask, it'll recognize you and leave you alone. If you're wearing it, it assumes you're one of the old animatronics and throws you in the closet with the rest of them.
So it's more or less about anticipating who'll be coming in.

There has to be some kind of gameplay element to stop you from keeping the suit head on the entire time.
Otherwise you'd just put it on and sit there for five nights and win the game. It appears that it is your only defense against the animatronics.
You also see mangled and disfigured animatronics like the new Foxxy which looks like it was torn apart.
Perhaps that is some kind of grudge holding entity that is destroying them. If it sees you with it on it will do the same to you, tearing you to pieces.
