I felt the same way. The key is to figure out how weapons ar similar and use them like that until you steadily branch out and develop skill with them individually.
It's a pretty easy switch between GS and Switch axe if you use the sword bit of the switch axe a lot.
It's also pretty easy to switch between Hammer and Hunting horn.

Have you tried the Hunting Horn? I main Swaxe, and decided to try it out and I transferred between the two pretty easily.
When I want to try out a new weapon, I use it against G.Jaggi and Peco until I feel like I know the moveset well, then take it against Lagi/Ludroth to learn how it fights underwater, then start taking it against tougher monsters like Rathalos and Jay Leno. It eases you into the weapon, but still helps you learn it pretty well.

MHFU is pretty damn hard throughout, more rigid making you learn proper timing of everything. P3rd is the easiest of the bunch and has armor skills so good early it breaks shit. 3U is underwhelming at first but balances out.

They are untill you're balls deep into G rank basically. Like the 8* shit, and even then Bowguns are still pretty good. Fights either go incredibly quickly or are slightly longer on average.

You grind when you want the rare, cool looking shit with a bunch of special skills. Technically, you can do just fine with a generic Jaggi armor set, upgraded to max defense and a mid-tier weapon, neither of which would require particularly rare parts.
Of course that only works if you know what you are doing, but this is not an MMO in which a certain monster is literally impossible to beat unless you are at a certain level or have specific equipment.
