Demon's souls PvP is some of the most fun I've ever had. This is my character.
lvl 99~ female thief with miralda's armor. +5 fatal secret dagger in right hand for increased riposte/backstab damage. Parrying dagger in left hand for easy parries. Cloak constantly active (invisible to anyone outside 5m range).
invade people and watch them freak out as I cast plague cloud and poison clouds at them and pick them off one by one.

Transition to a Blue Blood sword build. It's easy from a mage build.
You can also go hyper mage. Use a Kris blade to increase your default magic damage until you get a Morion Blade and the ring that increases your sorcery output/ damage output.
Get your HP below 30 percent and start one shotting most things.
