In an ideal world that wouldn't matter, though. You don't need a show to be about a lesbian relationship for it to have lesbians in it, just like you don't need DBZ to be about Goku and Chichi's relationship.
We even have actual examples of anime like that (Mouretsu Pirates and Horizon in the Middle of Nowhere), which is pretty nice.
The real reason has to do with the age of the franchise and the intended demographic.

many shonen series have lesbian characters, so the demographic has nothing to do with it. The beginning of dragonball may look childish at first glance, but its intended for young teenagers just like how bleach is or any other shonen. I don't think the demographic alone matters, but it's a contributing factor, alongside how old the show is. Modern shounen are more likely to throw in something for the yuri audience.

Yes, but that's not the world I was referring to. Lesbians don't have to be the norm to be present in shows that don't have a romantic focus. Sexuality would be just another facet of a character.
Look at how Bulma and Vegeta ended up married in DBZ, for example. We never saw how it happened, it just did. The plot didn't bother with all that, and that was fine. In the ideal world I'm referring to you'd have female characters do the same, or even just hit on other women in the show some times.

A quick google search brings up 2.4% of women in the US identify as gay or bi, meaning only 1 in 40 women would date another girl. Even if we were to increase it, it wouldn't warrant a lesbian in the story of dbz, not even as a background character.

More like shounen add blatant pandering to male otakus because anime lost its mainstream appeal. DBZ used to air on primetime but Super airs on sunday mornings. Quick google search... ever thought that most of those women do not openly even admit who they are and what they desire? Many not even knowing what they want because they have been brainwashed by their society? I have read several studies and human sexuality is lot more fluid than that. Yes, because that is the scenario presented in this fictional world. Normally in fiction it's expected of the reader to understand "Everything is normal EXCEPT for X". If suddenly there were other things that are not explained to be different but still appear, like lesbians in a scenario where it would be very unlikely for them to appear, then it just wouldn't make any sense. It's not a difficult to understand concept, considering EVERY person deals with this as EVERY fictional stories handles it this way, whether we talk about high fantasy or slice of life stories.
