I don't think that the calculation will scale up and down linearly like you're suggesting. 500 men could probably man every square inch of the wall surrounding Winterfell which would let them hold it against 10,000. 18 ironborn can't be everywhere at once. Even if you reduce the attackers to 360, making 18 5% of the attacking force I doubt they would be able to defend Winterfell indefinitely.

In the books they were loyal to Theon until the very end, all dying for him. In the show Theon actually did make them all loyal. I see. You only see two types of dogs on this show. The type that do vicious killing (Ramsay's dogs killing Walda, killing Ramsay, hunting that women with Myranda) and the type that just do the sniffing and searching (Hunting Sansa, hunting Bran&Rickon).
