The issue for me is that what truly separates GoT from other fantasy series isn't so much the intricacy of the setting, as it is the intricacy of the plot (which the setting enables). Remove the political upheaval, the threat of the Others, the swansongs of all these dying houses, and I can't picture whatever remains being even half as interesting.

I must say that season 6 really is a vast improvement over 5 with it being so fresh in my mind. In fact, season 6 improves on many things and actually made Tyrion interesting again. He inherited a failing house from his father and he raised it into the second strongest in the country, and then into the strongest. For decades he grovelled beneath the targs, he even watched his first son, his presumptive and realistically only heir, being made to take a vow of celibacy--and yet through all this he remained perfectly in control. Had he not been killed by Tyrion, I think he would have continued to run an strong, efficient kingdom.
His only failure was that he devoted so much time to political matters that he didn't spend any time with his children. They had no affection for him, he didn't understand them at all, and they all grew into much lesser versions of himself. There's the incestuous twins, one of whom has actual megalomania. There's the midget son who can't get over his mother issues and falls in love with literal prostitutes. And then the grandchildren are their own special concoction of failure.
