Not every part of westeros is affected harshly by winter. The Crownlands (where King's Landing is situated) are pretty temperate with almost Mediterranean climate in the King's Landing area. Everything beneath that is even warmer, with only the North and the kingdoms right beneath it being really harshly affected by winter.

I honestly can't name another live-action show that matches the CGI of GoT. In comparison to Hollywood Blockbusters, it's fairly mediocre. However, I knew anything of GoT and saw it for the time, I would assume it was a high budget 90s film.
