they were having production issues including running out of time and money already starting with Towers.
Things got worse by the time RotK was in post proudciton which is the reason for the shoehorned ghost army ending and break neck speed of everything after that.
In fact the whole "fake ending" gimmick was only there to try and slow down the movie so you didn't notice how rushed it was.
Hell even the final fight between Aragorn and the orc was edited.

FotR is the best
they had the most time to polish everything in it in post production unlike the last two which had to be rushed at the end and which also suffered from weaker scripts that resulted in some of the nonsense that was later put on full display in the Hobbit movies (bad banter, zany antics, etc)
Even if it isn't perfect with cringeworthy scenes, you should realize that the LOTR trilogy is probably the latest big budget franchise with a solid artistic value, cinematography / soundtrack / direction / decors.
Soon, you will watch it with nostalgia of a dead era.

The second and third films had way too much bullshit going on (Legolas surfing on an orc's shield, stupid Gimli-Legolas banter as well as ruining Gimli's character by making him comic-relief, the entire ghost army bit in the third film, elves showing up to Helm's Deep, etc.
The first film was about perfect with the exception of the staircase scene.
