Move some boulders or giant sized javelins to the battle field just in case. Back up your giant with a small troop of men comprised of archers and pikemen. Congratulations, you have an unstoppable tank that can solo a large portion of the enemy army and tear down their fortifications. But no, CGI budget doesn't allow for logical strategy

To be fair, the battle scenes are badass - very well done. But the show isn't making it look glorious any more than the books are. ~9,000 men were present at the battle, and 2,000 or so were Wildlings. That's not a majority of able bodied fighting men.
It's highly likely that most of the minor houses just reserved their men rather than getting involved in another scuffle. Even if they hate Ramsay, no one wants to be on his bad side by supporting Jon, and no one wants Ramsay to actually win anyway.
Think of GoT as a historical timeline. In the past 10 - 20 years, there's been pretty constant unrest and warring. The houses that bide their time, increase their lands and grow their manpower will win over the ones that throw theirs away for nothing.

Gerold Dayne's parentage is completely unknown, he's close enough to the same age, and he's widely regarded as one of the most dangerous people in Dorne for reasons no one has said.
