Final Cut.

If I'm watching with someone who is not familiar with the movie or book, then I might go for the theatrical or international version.

There's very little difference between directors cut and final cut. Just get whichever between those two.

There was the disastrous theatrical cut, then most of the problems were fixed with the directors cut. Ridley later fixed the directors cut of a few minor things. Those final changes weren't necessary, but they're not special edition star wars unnecessary.
