The original plan for the books was three books that tell the entire story of asoiaf.
GRRM is just one of those fantasy writers that, when faces with success, milk the story and expand it into n+1 books so the cash keeps on coming.
Because of this a lot of characters that would have bit parts in the original story were given more room to do subplot stuff that has next to no actual payoff (since the original outline of the story didnt have them do anything of importance).
You can clearly see the initial arcs of all major characters.
Jaime is a dick, but turns out to be noble.
Jon is a bastard, but turns out to be of royal blood.
Sansa is a clueless girl, but grows up to be a savvy noble.
Dany is literally fuckmeat but turns out to be a capable queen.
Etc...
Because the books dragged on a lot of these arcs just got stretched to the point that the primary characters are just spinning in tracks forever so secondary and tertiary ones got more interesting.
He's not dead. We never see him die or even fight, it's all just assumed. Those men respected him, they let him escape.

The show doesn't care that the entire North is disloyal to Ramsay because his family murdered their Ancestral Lords, it doesn't care about how every non-Lord in the entire Seven Kingdoms has been brought to ruin, it doesn't even care that the new selfish Lords are doing everything in their power to be completely routed by ice zombies.
Instead the entire Winterfell plot has nothing to do with Jon or anything Ramsay has have done wrong, it's about Sansa wanting her house back. It's not about the Riverlands standing up to an unstable regime that has utterly betrayed them, it's about Blackfish being a bully for not giving up the Tully's claim to the Riverlands to fight for Sansa a nation away. It's not about Cersei getting what she deserves for being as bad as the Mad King, it's about how evil religion is for not 'letting people do their thing bro'.

The Ice-River clans are cannibals. They live in the even more inhospitable parts, west of the Frostfang mountains with the wildlings of the Frozen Shore (who are dog-sled riding fishermen, think Eskimo's). They raid surrounding Wildlings for food since they basically live in the North Pole.
They're considered barbarians by fellow Wildlings. Honestly, giving the cannibalism to a different clan isn't that bad. The show really fucked up by having Mance send dangerous, savage cannibals beyond the wall on a highly sensitive covert ops missions. It's classic D&D thinking of "hurrr we need to cram in as much death as possible" so they add in a gratuitous scene of wildlings killing and eating villagers.

The siege and the Blackfish were just a stage for Jamie and Brienne to have their little moment, which will later lead to Jamie's character development that is so goddamn late it hasnt just missed the boat but the boat has gone and been back several times.
It's also an excuse to get Brienne to continue of her boring as fuck adventure, so she can go back North and reunite with Sansa and Jon. Chances are she will be killed by Ramsay, who will be killed by Jon, who will then become BFFs with Jamie for it.
