When filming Titanic, Cameron decided to build the models upside down because then he could just film them just by walking around with camera (and then invert the image later) and this method gave his shots great mobility. Also, it was easier to set up lights this way.

the cockpits were all practical,
the mako flashback was actually a big set that was designed to shake as the monster walked, and even had the dumpster in the alley set up to crumple as it was smashed by the monster. the only CGI in that flashback was actually the kaiju, which was neat.
although special mention goes to the fact that the CGI monsters were designed specifically so they would look like a dude in a suit practical effect.

In Aliens, scenes with miniature vehicles were all filmed in 48 fps and then slowed down twice to make the toys appear heavier and less floaty.
The views in the windows were simply screens playing a movie with 0.5x speed.

I dont know if im the only one but it kinda makes me sad when i see some of these and I am surprised that its practical because these days almost everything is CG not that i have a problem with it, when its used properly it makes a good scene look amazing but when its used half arsed just because they couldnt be bothered doing it looks terrible. Actors that are willing to go the extra mile for a role and the directors and crew that a willing to spend months building models and sets and doing take after take to get it right are the only people that seem to care about making good films for every one else its just a cash grab and it kill the possibility of any new kino
