He's a zombie so the chance that he is injured is small. Besides that it's rare to only wear a breastplate, there could have been multiple layers of gambeson/leather/mail under there meaning that the points that tore his armor didn't reach his body at all.

I am pretty sure that whatever endgame is, it's best to keep Tommen in the dark. Think about it, Olenna would have worked with Cersei if there was any intention of including the Lannisters in the final plan.
