Condensing the source material into a screenplay (even an 11.5h one) would inevitably cut a lot of dialogue. To justify the cost of the series, it also needed to appeal to a lot of people (which it clearly did) which in itself is a difficult task, but it was even harder for Jackson due to the fact that he was deeply committed to the project and wanted the film to conform to his vision for it. I remember reading the books as a kid and then watching the movie and being absolutely amazed, because I didn't expect them to put so much time and detail into the world. LOTR was the first movie I really got into, before then I only read books, because often times I felt like movies didn't do the story justice. But LOTR blew my mind
