Not everything in books translates over to film. Some great books translate so poorly that it's actually next to impossible to even do, because they were written for something entirely different. Condensing the source material into a screenplay (even an 11.5h one) would inevitably cut a lot of dialogue. To justify the cost of the series, it also needed to appeal to a lot of people (which it clearly did) which in itself is a difficult task, but it was even harder for Jackson due to the fact that he was deeply committed to the project and wanted the film to conform to his vision for it.
