In the book Glorfindel is at a battle with the Witch King and when some other elf tries to attack Glorfindel stops him and says 'not by the hand of man will he fall,' or something. The Witch King heard and took this to mean he was invincible. But Glorfindel wasn't laying protection on the Witch King, he was merely predicting the future. So it's not that a man literally couldn't kill him, just that no man would.
