Euron's 'collections' are for two purposes.
First, the priests.
Euron is collecting several priests of major religions, torturing them and forcing them to drink shade of the evening to see distorted and twisted visions. The end goal is for the priests to see Euron as a God. He wants to change the world in his image and he wants to be heralded as divine. He plans to do this by having priests of the world acknowledge him, Euron Bloodeye, as a dark god above all others.
Second, the sacrifices.
Aeron is attached to the prow of the Silence with Falia Flowers. Falia is not a priest, although that's who are bound to most of the prows. I believe the importance of Falia is her womb- she's carrying a bastard of Euron's. Euron has several bastards, including mutes and thralls on his crew. Euron has harnessed blood magic before to command the winds for his ships and the storm that killed Balon. Blood magic is especially powerful with kingsblood. As Euron is now a king in his own right, his sacrifices will be more powerful than ever. I believe he's going to sacrifice his bastards and Aeron to deliver him with magical power in his battles.
