Mya and Edric both had names based on where they were, while Aegor had it based on where he was raised, not where he was born, which was King's Landing. In the case of Gendry if he was to have been recognized by Robert, he'd have been Gendry Waters. However if he was recognized now, he'd just be Gendry Storm considering he'd be a Baratheon bastard.

Night's King is his current challenge and the most important part of his story. Aerys killed his Grandfather and his uncle and namesake, and was a huge part of the events that led up to where everyone is now.
