What does the scene where the old dude takes one of his eyes mean?
One of his eyes off and gives it to a young prostitute*

Jodorowsky didn't care about embedding any kind message in his symbols, they are there for their own sake. The meaning is for you to create for yourself.

https://en.wikipedia.org/wiki/Panic_Movement
"The movement's violent theatrical events were designed to be shocking,[2] and to release destructive energies in search of peace and beauty."
"Jodorowsky later started to work also on film"
Basically Jodorowsky regurgitated any and all kinds of imagery he'd seen before that might provoke the view. violence, profanity, absurdity, sex, occultism etc. He wants to get a reaction from the viewer, not transmit his secret message via new age imagery.

Jodorowsky had a lot of problems with censorship in Mexico over the years. Could be a statement about creeping fascism.
