The first okaish Lisa-centered episode was Lisa the Vegetarian, which is from S7.
All Lisa-centered episodes from the first six seasons are awesome. Even Moaning Lisa.

Not really.
Lisa the Vegetarian has the usual structure of a Lisa episode (Lisa struggles with personal problems, then at the end she grows up a with while still being herself), but the overall problem with the episode is that it lacks any emotional core.
Moaning Lisa, Lisa's Substitute, Summer of 4 ft 2., etc, revolves around Lisa realising she's a Simpsons/a woman/too smart and brilliant and she will never achieve any of her dreams. That's a terrible thought for a 8 year old girl, but The Simpsons knew how to handle such serious themes with humour.
Lisa's Pony, Lisa the Greek or the already mentioned Lisa's Substitute deals with Lisa's relationship with his father. Again, awful things happens, but the story is well executed, the show never falls to deliver the 10 jokes per minute quota, and the ending is satisfying.
How exactly Lisa becoming vegetarian is a touchy subject?
