The point of it is that Arthur Dayne is memorable for two reasons. The first is being the greatest swordsman of his time. The second is being Sword of the Morning, wielder of Dawn.
Adaptations change from the original. This is fine. There have been good changes in the show. For example, the Varys and Littlefinger scenes. Cersei and Bobby's heart to heart. Roose being less of an obvious cartoon villain.
But taking an iconic character and removing what made him iconic is not a good change. Imagine if Tyrion wasn't a dwarf. Imagine if Viserys was sane and rational. Imagine if Dany hatched mammoth eggs instead of dragons.

How much of this back story about the sword and the house and the Sword of the Morning title was internal dialogue? How much of it could have been wedged into the spoken dialogue on the show?
You have to consider it from the perspective of the writers. They have to cut things, and some things will just require to much set up to cram in, like the whole backstory of that character and his house and his title and his sword, and in the end it won't matter much in to the story. I know in the book its this revered sword but in a show full of swords its just another fucking sword unless you explain all of that, and you just can't spend that much time on it at the expense of the rest of the story.

We never see the fight in the books. For all we know, Dayne did use two swords. He clearly also has Dawn in the show, and they wanted him to be able to fight 5 guys at once. Giving him a sword in each hand is a good way to do that.
