In Alien, the cast didn't know exactly what the Chestburster scene would look like because the script was so vague and they were kept away from that part of the set. At the same time the actor for Dallas and for Lambert were dating and were ready to settle down. Dallas's actor though set up a little arrangement with Ridley Scott beforehand, so when the Chestburster pops out you can see a little engagement ring in its mouth, and that's why Lambert's freaked-out reaction looks so real - because she was actually just proposed and they used that take in the final cut.
