IMO it should've been the final moment of episode 10 last season. Finish Hardhome with him getting stabbed after bringing more wildlings through and the end the episode with the mutiny. We all knew the rez was coming and as you said there was no tension at all. It just became an anticlimactic wait for something we knew was coming. The point of the mountain is that he's so fuckstrong that he can wear plate armour that's twice as thick as everyone else's, wield a two-handed sword in one hand and a fuckhuge shield with the other WITHOUT being slower than your average dude in regular plate armour wielding a regular sword and shield. What he's lacking in is SKILL, because he doesn't need it mowing down peasants when he's literally untouchable.
Oberyn survived as long as he did by using a spear to negate his reach and not wearing any armour at all to be more agile. Also he had a tiny copper shield that he used to blind the Mountain by reflecting the sun in his eyes whenever he could.

Why is Ramsay still alive? I feel like, just as a character, he's outlived his purpose in the show. I mean what connection does he even have with Jon in the show? Or in the books for that matter?
Roose Bolton has more of a connection having actually killed Jon's brother and usurped his father's position.
Ramsay's strongest connection was to Theon, at first as a manifestation of Theon's envy and lust for power, then as his self-hatred, punishing him for his misdeeds. Trying to make him forget who was and could have been. However at the end Theon overcomes that, accepts his guilty conscience, but finds the strength to move forward.
At that point, Ramsay should have died.
