I enjoy Roose getting all pissed off on the screen. Really helps build up his reputation as a man who never had to raise his voice at anyone.

Children of Forest hold back technological progress. They are actually the bad guys. When people tried to colonise their planet, the indigenous races (CoF and giants) got salty and pwned them with magic. But the colonists have managed to study some of the magic and turn it to their purposes. Part of them used magic and biotechnology to turn into Others and so adapt to long winters. The other part bred dragons and founded Valyria. But when they lost connection to their homeworld, the majority of people still got thrown back to the medieval state. Then the Others were almost gone extinct and the remaining part went into a long cryosleep. And you all know what happened to Valyria.
Actually it fits pretty well into Martin's multiverse where people spread through the galaxy, but there are periodical space wars and cataclysms, which result in whole planets being cut off from other inhabited worlds and reverting to a prehistoric or medieval state (see kavalar in Dying of the Light).
Also perhaps there were also rival factions among the colonists, hence the division into Valyrians and Others. So Azor Ahai could be a sort of Valyrian genetical engineering project to breed a perfect warrior who is immune to Others' biotech and magical weapons, and can wield Valyrian magical weapons to defeat both Others and CoF.
