I was treated to 3 hours of DDL acting like an asshole to everyone else without ever being given the explanation for his ambition or his lack of morals, we just get to see an asshole make money and then kill a fake priest after mocking him.

Not everything has to be spoon fed to the audience. Quite honestly watch the movie again and do a character study of DDL. Along with a quick google search of the time and setting to add context.

although DDL was ruthless he still had some values, which is why he killed the priest. Plainview did not mask his ambitions or ruthlessness and he hated how the priest masked his.
