We are actually in what will eventually be considered a golden age for star wars right now.
New movies coming out yearly is exciting and fresh. I'm sure it will get old eventually but for now its awesome to finally see it after ~10 years since Episode III.
We are also at the beginning of an entirely new continuity, with new content being released every month for fans of not just only the OT, but also the Prequels and the Sequel trilogy.
Not to mention, being a new continuity, all of the stories we are getting are pretty high quality.
They haven't quite reached the level of the best the old EU had to offer, but it sure isn't as bad as the old EUs worst. Lost Stars, Tarkin, Lords of the Sith are all awesome. Not to mention the comics which, even though the ongoings aren't that good, find awesome stories through the one-offs and mini-series.
And on top of ALL THAT, Star Wars Rebels is finally finding its footing and producing some episodes that are even up to the quality of the theatrical movies (see picture related)

There is literally already a great "legends" comic with this exact concept except probably better

I dunno this sounds kinda fanficy to me. Lords of the Sith is similar but more about a major scale war between the Free Ryloth Movement and the empire. It seems similar enough for you to definitely enjoy it. Vader is a total badass all throughout the book

I really liked how they fleshed out Vader and Sheev's relationship. Like no shit it's gonna be fucked up when you both know at some point one of you has to kill the other.
Plus seeing Vader's internal struggle and his memories from the PT and The Clone Wars which I was watching at the time was cool.
