Dormammu is basically a deity of his own dimension and IIRC tries to absorb other dimensions into it. He also has some very powerful magic, and typically takes some effort for Strange to take down. He's also way more powerful in his home dimension, so fighting him there is typically a VERY bad idea, and he once slapped the shit out of the Hulk for trying.
Shuma-Gorath is tricky. He's basically a lovecraftian entity existing outside the dimension and always trying to get in. He's virtually impossible to kill and just has to pushed back. Strange managed to kill him once, but Strange started turning into him so it didn't work. Shuma was partially responsible for the Cancerverse becoming what it was, and him fully entering the world would basically mean it's fucked.
