I'm looking to better understand how they made these scenes.

Eh, going to space to film was a lot cheaper back then than nowadays. America doesn't even have shuttle anymore does it? But with the rise of private space launch companies, maybe you can get them filmed cheaper

Smaller scale, but look into the X-Wing Miniatures Game by Fantasy Flight Games.
There have been other Star Wars miniatures over the years, check eBay and collector sites.
People do modify and paint these, so I'm sure you could commission someone to make a more detailed model for macro photography.
