Jerusalem is a symbolic place. All three major religions have claimed the city. But the city itself doesn't have any actual geopolitical relevance.
This is the meaning of the scene. The city is worth nothing and everything at the same time.
By conquering the city Salahdin didn't really gain anything, but it won a moral victory against Christianity, which is another theme of the film: it sucks. Islam is better.
