All anthology stuff, for the foreseeable future, will be about iconic well known characters that are popular across generations and cultures or will tie into the OT like Rogue One. Solo, Boba, probably Yoda and a Vader solo movies are the kind of stuff one should expect. Maybe a TFA prequel without OT characters.
In any case, don't expect any book, video game, comic or cartoon shit in movies anytime soon, unless Disney really gets desperate.

Star Wars Anthology: Kenobi
McGregor as Obi Wan obviously.
An infant Luke Skywalker is saught after by the crime community after tatooine crime lords find out there is "more to the child than what appears at first glance". Jabba the Hutt, recognizing the name "Skywalker" from the clone wars sends out a ruthless bounty hunter (original character) to find and capture the young Jedi.
The now "Ben Kenobi" has to go on a quest across tatooine to find and return Skywalker to a distressed and guilty Uncle Owen (who blames Kenobi for allowing Luke to be captured in the first place out of neglegence).
Along the way Ben must learn to put the past behind him. He struggles with an identity crisis on account of recently changing his name and losing his padawan which he partially blames himself for.
The movie will have heavy references to The Clone Wars tv series. Callbacks to the Dutchess of Mandalore and possible cameos from Cad Bane and MAYBE Ahsoka Tano, who at this point is also in hiding.
Use picture related as reference of how Kenobi should look.

TFA takes place about 35 years after ANH and Rey looks to be in her early 20's. It wouldn't make any sense.
I don't think Disney would make it canon that Obi-wan impregnated someone being as old as he was in ANH. It would be too weird for casual audiences and they'd have to make up too many bs excuses for why they're not with him in ANH. Also the reveal would have no dramatic impact on the story, as them being siblings will.

The Clone Wars didn't take place in all places in the galaxy.
The galaxy of Star Wars does not consist of a small selection of planets. Not every planet had wars on them. You also assume that every planet was aligned with a faction, either Republic or Separatist. This is not the case, as Tatooine was still under Hutt control, Kamino was undocumented and such. Not everyone can be connected through news.
A young kid on Tatooine, only knew the Jedi as warriors. This applies to both Luke and Young Anakin. Anakin recognized their laser swords as making them a Jedi, and Luke recognized them as warriors serving in the Clone Wars. The force, a power that seems exclusive to this "religion" of either Sith/Jedi, was unheard of to Young Luke when Ben/Obi-wan was explaining what a Jedi Knight truly was.
You'd expect Luke, who knew that the Jedi were warriors, would have some knowledge of how powerful, or what tools they used besides a lightsaber. However, this is not shown in both the civilized Prequel universe or the mainly frontier-based slew of planets we see in the OT.
So, people were knowledgable of the Jedi and even the force powers, but it was not consistent with everyone in the universe. Some knew, such at Motti, what force powers were. Others, just recognized the Jedi and their sabers. Some, like Han Solo, dismissed the force as non-existent.
Your argument falls apart since it's based off the assumption that everyone knows the same knowledge about the Jedi. But even 20-40 years later, people of all sorts of professions, whether it be smuggler, Imperial Command, or young farm-hand, knew bits and pieces of information about the Jedi despite being a very big conflict in the universe.

The Jedi were thought of as a different concept in the originals. They were very inspired by Kurosawa films. The prequels changed a lot of there concepts. And it wasn't always for the best. That's all.

disney should try the prequel approach and make a new story, but make better movies. There is no doubt that the prequels were bad movies, and thus their impact lessened. But Disney gave us what some star wars fans were expecting ESB to be: nostalgia the movie.
Even though TFA played it safe, it was a disappointing movie as it makes some fans think it'll be nostalgia reference, the trilogy instead of making us feel new experiences like the OT did with each movie, and what the prequels tried to do but failed since it could not make a good impressio/connection upon older fans.

But now the Emperor has succeeded in creating new Sith magic to do so. Obi Wan must locate hiding Jedi and destroy the new threat to younglings everywhere before they become the Emperors slaves. Basically another suicide mission but with all Jedi, that delves into Kenobi's psychology as well as the other surviving Jedis. Have him stop by Yoda's place for Force Ghost training plus to make "was I any different when you taught me" more poetic. Should establish that Yoda is old and sick and dying, so Obi Wan and his other Jedi crew leave, win, mostly die and only he returns to solitude on Tatooine.

Might have to be rated R, but really its just meant to show the philosophy of the Sith on screen fully for the first time beyond rantings of unlimted power. The Emperor as a character deserves elaboration. Would need a new actor that could pull of McDiarmid's intensity though.

The most dastardly or most benevolent Star Wars characters (depending on who's paying them) finally get their chance to shine.
Instead of your typical action movie, this would actually be a mystery movie with a mix of old and new bounty hunters paid to investigate events that unfolded after Ep. IX as to ease the wait between trilogies. It would allow more characterization and also allow for more dramatic tension rather than having sharpshooters just blazing through a movie. I have no clue what the mystery could be, but it seems The Force Awakens will deal with the mystic elements of the Force more so maybe something like finding the 1st Jedi or whatever. Something magical from non-magic users' perspectives.
