The thing about TFA is that, unlike most modern popular films, there's almost no exposition. In that one sense (and only in that one sense) is sort-of like an art film: we're made to understand backstory through hints, environment, and characterization. We get that the fact that she lives on a hostile planet is why she had to learn how to defend herself. We get that her being a ship scavenger is why she's so knowledgeable concerning the falcon. We get from her reaction when Finn mentions Luke that she knows about the force through myth and legend. The storytelling is often visual, or implied through other means.

Luke was trained for like 5 minutes by Obi-Wan. He didn't receive his proper training until he met Yoda, and even then he never completed it. It was impressive, but mostly because his friends helped keep the tie fighters off his back.
The mission wasn't impossible, otherwise they wouldn't have tried it. The High Command and Luke were pretty confident it'd work. Only that one pilot said it was impossible.

Luke was training in the force while the millennium falcon travelled to alderaan. Granted, I don't know exactly how long that time was, but it still makes for a fuckton more time training than Rey.
